Cinnamon Cereal Crispies
Makes about 5 dozen cookies
|1/2||cup granulated sugar|
|2||teaspoons ground cinnamon, divided|
|1||package (18-1/4 ounces) white or yellow cake mix with pudding in the mix|
|1/3||cup vegetable oil|
|2||cups crisp rice cereal|
|1||cup chopped nuts (optional)|
- Preheat oven to 350°F. Lightly spray cookie sheets with nonstick cooking spray. Combine sugar and 1 teaspoon cinnamon in small bowl.
- Beat cake mix, water, oil, egg and remaining 1 teaspoon cinnamon in large bowl with electric mixer at medium speed 1 minute. Gently stir in rice cereal, cornflakes, raisins and nuts, if desired until well blended.
- Drop batter by rounded tablespoonfuls 2 inches apart onto prepared cookie sheets. Sprinkle lightly with one half of cinnamon-sugar mixture.
- Bake about 15 minutes or until lightly browned. Sprinkle cookies with remaining cinnamon-sugar mixture after baking; transfer to wire racks to cool completely.
