Cinnamon Fruit Crunch
Makes 6 servings
|1||cup low-fat granola cereal|
|1/4||cup toasted sliced almonds|
|2||tablespoons plus 1 teaspoon packed brown sugar, divided|
|2-1/4||teaspoons ground cinnamon, divided|
|1/2||cup vanilla low-fat yogurt|
|1/8||teaspoon ground nutmeg|
|2||cans (16 ounces each) mixed fruit chunks in juice, drained|
- Combine granola and almonds in small bowl. Melt margarine in small saucepan. Blend in 2 tablespoons brown sugar and 2 teaspoons cinnamon; simmer until sugar dissolves, about 2 minutes. Toss with granola and almonds; cool. Combine yogurt, 1 teaspoon brown sugar, 1/4 teaspoon cinnamon and nutmeg in small bowl.
- To serve, spoon approximately 1/2 cup chunky mixed fruit onto each serving plate. Top with yogurt mixture and sprinkle with granola mixture.
