- Season chicken all over, including under the skin.
- Melt butter in pan. Add chicken and place in smoker at 250° with heavy smoke.
- Cook 1 hour, then remove chicken and coat in sauce.
- Return to smoker and cook 20-30 minutes, until internal temperature of 170 degrees.
