Couscous and Apricots
Makes 4 servings
|1||can (5-1/2 ounces) apricot nectar or apple juice|
|1/2||cup thinly sliced celery|
|1/4||cup chopped dried apricots or apples|
|1/4||teaspoon ground allspice|
|1/3||cup quick-cooking brown rice|
|1/4||cup coarsely chopped walnuts|
- Combine apricot nectar, celery, water, apricots, allspice and salt in large saucepan. Bring to a boil over high heat. Remove from heat. Stir in couscous, brown rice and walnuts. Cover; let stand 5 minutes until liquid is absorbed. Fluff couscous mixture with fork.
