Creamed Spinach

1 package (10 ounces) frozen chopped spinach, thawed
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1 cup milk
1/4 teaspoon salt
Dash black pepper
1 tablespoon grated Parmesan cheese (optional)
3/4 cup all-purpose flour
3 eggs
1 cup milk
3 tablespoons butter or margarine, melted
1/2 teaspoon salt
About 2 tablespoons vegetable oil


  1. Press spinach to remove all moisture; set aside. Melt butter in medium saucepan over medium heat. Stir in flour; cook until bubbly.
  2. Slowly stir in milk. Cook until thickened. Add spinach; continue cooking over low heat, stirring constantly, about 5 minutes or until spinach is tender. Season with salt, pepper and cheese.
