|1||medium cucumber, coarsely chopped|
|1/2||cup coarsely chopped onion|
|1/2||cup loosely packed cilantro leaves|
|1||clove garlic, minced|
|1||tablespoon diced jalapeño or green chili pepper*|
|1/2||cup seasoned rice vinegar|
*Jalapeño and chili peppers can sting and irritate the skin, so wear rubber gloves when handling peppers and do not touch your eyes.
- Place cucumber, onion, cilantro, garlic and jalapeño pepper in food processor container; process 1 minute. Spoon mixture into small bowl; stir in vinegar.
