
Curried Lentils with Fruit
Curry powder, apples and raisins transform this humble dish of lentils into an exotic side for meats and poultry.

Ingredients
1-1/2 | cups uncooked lentils, rinsed, sorted and drained* |
1 | Granny Smith apple, cored, peeled and chopped |
1/4 | cup golden raisins |
1/4 | cup lemon nonfat yogurt |
1 | teaspoon curry powder |
1 | teaspoon salt |
*Packages of dried lentils may contain grit and tiny stones. Therefore, thoroughly rinse lentils. Then sort through and discard grit or any unusual looking pieces.
Preparation
- Combine 2 quarts water and lentils in large saucepan; bring to a boil over high heat. Reduce heat to medium-low. Simmer 20 minutes, stirring occasionally.
- Stir apple and raisins into saucepan; cook 10 minutes or until lentils are tender. Drain lentil mixture; discard liquid.
- Place lentil mixture in large serving bowl; stir in yogurt, curry powder and salt until well blended. Garnish as desired.
Cook's Tip
Apples brown easily once they are cut. To prevent undesirable browning, sprinkle lemon, apple or grapefruit juice over apple pieces.
