- Trim all but 1/4 inch of fat off brisket.
- Liberally apply BBQ Rub.
- Cook at 260 degrees using indirect heat for four hours. Flip hourly.
- Wrap in foil then cook another 3 hours at 275-300 degrees.
- Remove from heat and leave in foil for an hour before slicing and serving
