Desert Thirst Punch with Red Eye Cubes


Makes 10 servings


2 cups sugar
1 cup water
1/4 cup grated fresh ginger
Rind of 1 lemon, cut into strips
3/4 cup fresh lemon juice (juice of 5 or 6 lemons)
7-1/2 cups club soda, chilled
Lemon slices for garnish
Red Eye Cubes


  1. Prepare Red Eye Cubes.
  2. Combine sugar, water, ginger and lemon rind in medium saucepan. Bring to a boil. Reduce heat to low; simmer 5 minutes or until sugar dissolves and becomes syrupy. Set aside; cool completely. Stir in lemon juice and chill until serving time.
  3. Strain 2-1/2 cups lemon juice mixture into 1-quart measuring cup.
  4. For punch, pour lemon syrup into large bowl. Add club soda; stir briefly. For individual servings, combine 1/4 cup lemon syrup and 3/4 cup club soda. Add 1 or 2 Red Eye Cubes; garnish with lemon slice.
