White Chocolate Chunk Cookies


Makes about 2 dozen cookies


2 squares (1 ounce each) unsweetened chocolate
3 eggs
1 cup vegetable oil
3/4 cup packed light brown sugar
1 teaspoon baking powder
1 teaspoon vanilla
1/4 teaspoon baking soda
1/4 teaspoon salt
2-1/3 cups all-purpose flour
1 package (12 ounces) semisweet chocolate chunks


  1. Preheat oven to 350°F. Lightly grease cookie sheets or line with parchment paper. Melt unsweetened chocolate in top of double boiler over hot, not boiling, water. Remove from heat; cool.
  2. Beat eggs in large bowl until foamy. Add oil and brown sugar; beat until light and frothy. Blend in baking powder, vanilla, baking soda, salt and melted unsweetened chocolate. Stir in flour until smooth. Stir in chocolate chunks.
  3. Shape dough into walnut-sized balls. Place 2 inches apart on prepared cookie sheets. Bake 10 to 12 minutes or until set in center. Do not overbake. Remove to wire racks to cool.

White Chocolate Chunk Cookies

Substitute one package (12 ounces) white chocolate chunks or two white chocolate candy bars (5 to 6 ounces each), cut into chunks, for semisweet chocolate chunks.
