Easy Oriental Chicken Sandwich


Makes 4 servings


1/4 cup peanut butter
2 tablespoons honey
2 tablespoons light soy sauce
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger
4 boneless skinless chicken breasts (about 1-1/4 pounds)
4 onion or kaiser rolls, split
Lettuce leaves
1 cup sliced cucumbers
1 cup bean sprouts
1/4 cup sliced green onions


  1. Preheat oven to 400°F. Combine peanut butter, honey, soy sauce, garlic powder and ginger in large bowl; stir until well blended. Reserve 1/4 cup peanut butter mixture.
  2. Place chicken on foil-lined baking pan. Spread remaining peanut butter mixture over chicken. Bake 20 minutes or until chicken is no longer pink in center.
  3. Fill rolls with lettuce, cucumbers, bean sprouts and chicken; sprinkle with green onions. Serve with reserved peanut butter mixture.
