Egg Sandwich of Champions

Makes 1 serving


2 eggs
2 teaspoons butter
1 slice Swiss or American cheese
2 teaspoons sliced green onion (white part only)
Salt and pepper to taste
1/2 round pita bread, toasted or warmed


  1. Beat eggs with 1 teaspoon water in a small bowl.
  2. Melt butter in a 10-inch skillet over medium heat, turning pan to coat the bottom and sides. Pour in egg mixture and reduce heat to low. Add cheese and green onion and gently scramble with a wooden spoon. Season with salt and pepper. Cook until just set; serve in pita.
