The combination of carrots and orange is a classic. The flavors complement each other and best of all, it's healthy.
Makes 6 servings
|2||cups fresh or frozen sliced carrots|
|3/4||cup unsweetened orange juice|
|1||can (4 ounces) sliced mushrooms, undrained|
|4||stalks celery, sliced|
|2||tablespoons chopped onion|
|1/2||teaspoon dill weed|
|Salt and black pepper to taste (optional)|
|1/4||cup cold water|
- Combine all ingredients except cornstarch and water in medium saucepan. Simmer, covered, 12 to 15 minutes or until carrots are tender. Combine cornstarch with water in small bowl. Stir into vegetable mixture; cook and stir until mixture thickens and bubbles.
