French Toast with Warm Apples
Makes 4 servings
|3||tablespoons fat-free (skim) milk|
|3||tablespoons sugar substitute,* divided|
|1/2||teaspoon vanilla, divided|
|1/8||teaspoon ground nutmeg|
|5||ounces Italian bread, cut diagonally into 4 slices|
|Nonstick Cooking Spray|
|2||teaspoons canola oil|
|1||cup sliced unpeeled Granny Smith apples|
|1||tablespoon reduced-fat margarine|
|4||teaspoons sugar-free pancake syrup|
*This recipe was tested with sucralose-based sugar substitute.
- Combine egg whites, eggs, milk, 2 tablespoons sugar substitute, 1/4 teaspoon vanilla and nutmeg in 13x9-inch baking dish; stir with fork until well blended. Add bread slices; turn several times to coat evenly.
- Coat medium nonstick skillet with cooking spray. Add oil; heat over medium heat until hot. Tilt skillet to coat with oil. Add bread slices; cook 3 minutes. Turn; cook 3 minutes longer or until golden.
- Meanwhile, add apples, water and remaining 1 tablespoon sugar substitute to small skillet. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, 2 minutes or until apples are just crisp-tender. Remove from heat; add margarine and 1/4 teaspoon remaining vanilla, stirring until margarine is melted.
- Top each bread slice with 1 teaspoon syrup and equal amount of apple mixture.
