As we usher in the cooler weather, we get a whole new crop of delicious veggies to choose from, and winter squash is one of the tastiest. This pureed soup is not only low in sodium, but low-fat margarine, nonfat milk and fat-free sour cream also means it's low in fat as well. Sound too healthy to be tasty? Well, have no fear, it's delicious. The addition of garlic, thyme, rosemary and uber-flavorful shallots spice up things quite nicely. An added plus? It's easy to make. Simply sauté the veggies, add the broth and chicken and simmer, then run it through the food processor for a smooth and creamy texture.
