Fresh Salsa

This recipe is part of the recipe for Brunch Eggs Olé


Makes 1 cup


3 medium plum tomatoes, seeded and chopped
2 tablespoons chopped onion
1 small jalapeño pepper,* stemmed, seeded and minced
1 tablespoon chopped fresh cilantro
1 tablespoon lime juice
1/4 teaspoon salt
1/8 teaspoon black pepper

*Jalapeño peppers can sting and irritate the skin, so wear rubber gloves when handling peppers and do not touch your eyes.


  1. Combine tomatoes, onion, jalapeño pepper, cilantro, lime juice, salt and black pepper in small bowl. Refrigerate until ready to serve.
