Fried Cinnamon Puffs

Makes about 3 dozen puffs
Ingredients
3/4 | cup milk |
2 | eggs, beaten |
1/4 | cup butter, softened |
1 | teaspoon salt |
3 | cups all-purpose flour |
2/3 | cup sugar, divided |
3 | teaspoons ground cinnamon, divided |
1-1/2 | teaspoons active dry yeast |
Vegetable oil for deep-frying |
Preparation
- Measuring carefully, place milk, eggs, butter, salt, flour, 2 tablespoons sugar, 1-1/2 teaspoons cinnamon and yeast in bread machine pan in order specified by owner's manual. Program batter cycle setting if available; if not, program dough cycle setting. Press start. (The dough will be extremely soft, more like batter than dough.)
- When cycle is complete, stir dough to deflate. Pour about 2 inches oil into large saucepan or Dutch oven. Heat oil to 400°F. Combine remaining sugar and 1-1/2 teaspoons cinnamon in shallow bowl.
- Drop dough by level tablespoonfuls into hot oil. Fry until brown, 1-1/2 to 2 minutes on each side. Drain on paper towels. Roll in cinnamon-sugar mixture. Serve warm.
