Fried Cinnamon Puffs

Makes about 3 dozen puffs

3/4 cup milk
2 eggs, beaten
1/4 cup butter, softened
1 teaspoon salt
3 cups all-purpose flour
2/3 cup sugar, divided
3 teaspoons ground cinnamon, divided
1-1/2 teaspoons active dry yeast
Vegetable oil for deep-frying

  1. Measuring carefully, place milk, eggs, butter, salt, flour, 2 tablespoons sugar, 1-1/2 teaspoons cinnamon and yeast in bread machine pan in order specified by owner's manual. Program batter cycle setting if available; if not, program dough cycle setting. Press start. (The dough will be extremely soft, more like batter than dough.)
  2. When cycle is complete, stir dough to deflate. Pour about 2 inches oil into large saucepan or Dutch oven. Heat oil to 400°F. Combine remaining sugar and 1-1/2 teaspoons cinnamon in shallow bowl.
  3. Drop dough by level tablespoonfuls into hot oil. Fry until brown, 1-1/2 to 2 minutes on each side. Drain on paper towels. Roll in cinnamon-sugar mixture. Serve warm.
