Garlic Lovers' Chicken Caesar Salad


Makes 8 servings


1 can (10-3/4 ounces) reduced-fat condensed cream of chicken soup, undiluted
1/2 cup fat-free reduced-sodium chicken broth
1/4 cup balsamic vinegar
1/4 cup fat-free grated Parmesan cheese, divided
3 cloves garlic, minced
1 tablespoon reduced-sodium Worcestershire sauce
1/4 teaspoon black pepper
2 heads romaine lettuce, torn into 2-inch pieces
4 grilled boneless skinless chicken breasts (about 1 pound), cut into 2-inch strips
1/2 cup fat-free herb-seasoned croutons


  1. Combine soup, broth, vinegar, 2 tablespoons cheese, garlic, Worcestershire sauce and pepper in food processor or blender; process until smooth.
  2. Combine lettuce and 1 cup dressing in large salad bowl; toss well to coat. Reserve remaining dressing for another use. Top with chicken and croutons; sprinkle with remaining 2 tablespoons cheese.
