Garlic Lovers' Chicken Caesar Salad
Makes 8 servings
|1||can (10-3/4 ounces) reduced-fat condensed cream of chicken soup, undiluted|
|1/2||cup fat-free reduced-sodium chicken broth|
|1/4||cup balsamic vinegar|
|1/4||cup fat-free grated Parmesan cheese, divided|
|3||cloves garlic, minced|
|1||tablespoon reduced-sodium Worcestershire sauce|
|1/4||teaspoon black pepper|
|2||heads romaine lettuce, torn into 2-inch pieces|
|4||grilled boneless skinless chicken breasts (about 1 pound), cut into 2-inch strips|
|1/2||cup fat-free herb-seasoned croutons|
- Combine soup, broth, vinegar, 2 tablespoons cheese, garlic, Worcestershire sauce and pepper in food processor or blender; process until smooth.
- Combine lettuce and 1 cup dressing in large salad bowl; toss well to coat. Reserve remaining dressing for another use. Top with chicken and croutons; sprinkle with remaining 2 tablespoons cheese.
