Makes 15 servings
|1/4||cup cottage cheese|
|1/4||cup vanilla yogurt|
|1||apple, peeled, cored and grated|
|4||to 6 tablespoons powdered sugar|
|Orange food coloring (optional)|
- Add cottage cheese and yogurt to food processor or blender; process until smooth. Squeeze all liquid from grated apple using paper towels. Fold apple and enough sugar into yogurt mixture to make a thick, spreadable consistency. Tint with food coloring, if desired. Using rubber spatula spread mixture onto flat side of 15 ginger snaps; top with remaining cookies. Decorate as desired.
