Good Morning Bread


Makes 1 (1-1/2-pound) loaf


1/4 cup water
1 cup mashed ripe bananas (about 3 medium)
3 tablespoons vegetable oil
1 teaspoon salt
2-1/4 cups bread flour
3/4 cup whole wheat flour
1/2 cup uncooked old-fashioned oats
1/4 cup nonfat dry milk powder
1 teaspoon grated orange peel (optional)
1 teaspoon ground cinnamon
2 teaspoons active dry yeast
3/4 cup chopped pitted dates


  1. Measuring carefully, place all ingredients in bread machine pan in order specified by owner's manual.
  2. Program basic cycle and desired crust setting; press start. Immediately remove baked bread from pan; cool on wire rack. Serve with desired toppings.


This recipe produces a moist, slightly dense loaf that has a lower volume than other loaves. The banana flavor is more prominent when the bread is toasted.
