Grilled Glazed Salmon


Makes 4 servings


1/3 cup apple juice
2 tablesoons soy sauce
1/2 teaspoon minced fresh ginger
1/8 teaspoon black pepper
1-1/4 pounds salmon fillet


  1. Prepare grill for direct grilling. Combine apple juice, soy sauce, ginger and pepper in small saucepan. Bring to a boil over medium heat. Reduce heat; simmer apple juice mixture about 10 minutes or until syrupy. Cool slightly.
  2. Brush side of salmon fillet without skin with apple juice mixture. Grill salmon, flesh side down, on oiled grid over medium-hot heat 5 minutes. Turn and brush salmon with apple juice mixture. Grill 5 minutes more or until fish flakes easily when tested with fork.
