white pepper
worcestershire powder


  1. Trim, salt & apply rub. Let sit for 1/2 hour.
  2. Cook fat side down at 350 over direct heat for 1/2 hour. Flip and cook for another 1/2 hour.
  3. Separate point from flat and wrap both. Cook 3-4 hours over indirect heat.
