Cookies, anyone? Check out these tips for making Christmas cookies.
Makes about 8 dozen cookies
|1/2||cup (1 stick) butter, softened|
|3/4||cup packed brown sugar|
|1-1/4||cups all-purpose flour|
|1/2||teaspoon baking soda|
|1/2||teaspoon ground cinnamon|
|1||cup (8 ounces) diced candied pineapple|
|1||cup (8 ounces) whole red and green candied cherries*|
|1||cup (8 ounces) chopped pitted dates|
|1||cup (6 ounces) semisweet chocolate chips|
|1/2||cup whole hazelnuts*|
|1/2||cup pecan halves*|
|1/2||cup coarsely chopped walnuts|
*The cherries, hazelnuts and pecan halves are not chopped, but left whole.
- Preheat oven to 325°F. Lightly grease cookie sheets or line with parchment paper. Beat butter and brown sugar in large bowl until creamy. Beat in egg until light and fluffy. Mix in flour, vanilla, baking soda, cinnamon and salt. Stir in pineapple, cherries, dates, chocolate chips, hazelnuts, pecans and walnuts. Drop dough by rounded teaspoonfuls 2 inches apart onto prepared cookie sheets.
- Bake 15 to 20 minutes or until firm and lightly browned around edges. Remove to wire racks to cool completely.
