Beets have more sugar than any other vegetable but are still low in calories at only 60 per cup.
Makes 4 servings
|1/4||cup unsweetened apple juice|
|2||tablespoons cider vinegar|
|2||cans (8 ounces each) sliced beets, drained|
|Black pepper (optional)|
- Combine apple juice, vinegar, honey and cornstarch in large nonstick saucepan. Cook, stirring occasionally, over medium heat until simmering. Stir in beets; season to taste with salt and pepper, if desired. Simmer 3 minutes.
