Italian Sausage and Vegetable Stew

Makes 6 servings


1 pound hot or mild Italian sausage links, cut into 1-inch pieces
1 package (16 ounces) frozen vegetable blend, such as onions and green, red and yellow bell peppers
2 medium zucchini, sliced
1 can (14-1/2 ounces) diced Italian-style tomatoes, undrained
1 jar (4-1/2 ounces) sliced mushrooms, drained
4 cloves garlic, minced


  1. Cook sausage in large saucepan, covered, over medium to medium-high heat 5 minutes or until browned; pour off drippings.
  2. Add frozen vegetables, zucchini, tomatoes with juice, mushrooms and garlic; bring to a boil. Reduce heat and simmer, covered, 10 minutes. Cook uncovered 5 to 10 minutes or until thickened slightly.

Serving Suggestion

Serve with garlic bread.
