Italian Sausage with Pesto Pasta
Makes 6 servings
|1/2||cup packed basil leaves|
|1/4||cup plus 2 tablespoons walnuts, toasted, divided|
|2||cloves garlic, peeled|
|1/4||cup grated Parmesan cheese|
|5||tablespoons olive oil|
|1||package (12 ounces) uncooked linguine|
|1||pound cooked Italian sausage, cut into 1/2-inch slices|
|2||cups broccoli florets|
- Combine basil, 1/4 cup walnuts and garlic in food processor or blender; process until smooth. Add cheese. With machine running, pour oil through feed tube and process until ingredients are well blended; set aside.
- Prepare pasta according to package directions. During last 2 minutes of cooking, add sausage and broccoli to pasta; drain.
- Combine pasta mixture with pesto and garnish with remaining 2 tablespoons walnuts. Serve immediately.
