Makes 4 servings
|2||tablespoons olive oil|
|1||pound kielbasa sausage, cut into 1/4-inch-thick slices|
|1||small red onion, thinly sliced|
|1||small green bell pepper, cored, seeded and thinly sliced|
|2||cups sauerkraut, rinsed and well drained|
|2||teaspoons Dijon mustard|
|1/2||teaspoon caraway seeds|
|1/4||teaspoon black pepper|
- Heat oil in large skillet. Add sausage, onion and bell pepper. Cook over medium heat 5 to 10 minutes or until vegetables are tender and sausage is lightly browned, stirring occasionally. Drain fat.
- Add sauerkraut, mustard, caraway seeds, salt and black pepper to skillet. Cook over medium heat 3 to 5 minutes or until heated through.
