Kielbasa and Sauerkraut Skillet Dinner


Makes 4 servings


2 tablespoons olive oil
1 pound kielbasa sausage, cut into 1/4-inch-thick slices
1 small red onion, thinly sliced
1 small green bell pepper, cored, seeded and thinly sliced
2 cups sauerkraut, rinsed and well drained
2 teaspoons Dijon mustard
1/2 teaspoon caraway seeds
1/4 teaspoon salt
1/4 teaspoon black pepper


  1. Heat oil in large skillet. Add sausage, onion and bell pepper. Cook over medium heat 5 to 10 minutes or until vegetables are tender and sausage is lightly browned, stirring occasionally. Drain fat.
  2. Add sauerkraut, mustard, caraway seeds, salt and black pepper to skillet. Cook over medium heat 3 to 5 minutes or until heated through.
