Lemoned Shrimp with Basil
Makes 4 servings
|1||pound raw medium shrimp, peeled and deveined|
|4||cloves garlic, minced|
|1||teaspoon grated lemon peel|
|1/4||teaspoon seafood seasoning mix|
|1/4||teaspoon dried red pepper flakes|
|2||tablespoons diet margarine|
|2||tablespoons lemon juice|
|2||tablespoons chopped fresh basil|
- Place a 12-inch nonstick skillet over medium heat until hot. Coat skillet with cooking spray. Add shrimp, garlic, lemon rind, seafood seasoning and red pepper flakes. Cook 4 minutes or until shrimp are opaque in center, stirring frequently.
- Remove from heat; add remaining ingredients. Serve in individual baking dishes or ramekins.
Serve with cooked rice and steamed asparagus spears, if it fits into your meal plan.
