Lemony Roasted Chicken


Makes 6 servings


1 fryer or roasting chicken (3 to 4 pounds)
1/2 cup chopped onion
2 tablespoons butter
Juice of one lemon
1 tablespoon chopped fresh parsley
2 teaspoons grated lemon peel
1/4 teaspoon salt
1/4 teaspoon dried thyme leaves


  1. Remove and discard any excess fat from chicken. Place onion in chicken cavity and rub skin with butter. Place chicken in slow cooker.
  2. Squeeze juice of lemon over chicken. Sprinkle with grated lemon peel, salt and thyme. Cover; cook on LOW 6 to 8 hours.
