Mashed Sweet Potatoes with Roasted Red Onions the Editors of Publications International, Ltd.
Makes 6 servings
|6||cloves garlic, peeled|
|1||red onion, quartered, then sliced into 1-inch slices|
|1/4||cup olive oil|
|Salt and black pepper|
|2||pounds sweet potatoes, cooked and mashed (about 2-1/2 to 3 cups)|
- Preheat oven to 300°F. Place the garlic and onion on an 11X8-inch sheet of foil, drizzle with the oil and sprinkle with salt and pepper. Fold foil edges over vegetables to make a closed packet. Place packet in a glass baking dish. Bake about 1 hour or until onions are soft and translucent.
- In a medium bowl, combine the mashed potatoes and butter with the roasted garlic, onion and any juices. Serve immediately.
