Mediterranean Chicken Salad

|1||box (5-1/4 ounces) quick-cooking bulgur wheat|
|3/4||pound chicken tenders|
|1||tablespoon olive oil|
|1||cup chopped tomato|
|1||cup chopped fresh parsley|
|2||green onions, sliced|
|2||tablespoons lemon juice|
- Prepare bulgur according to package directions.
- While bulgur is cooking, cut chicken tenders into 1-inch pieces. Heat olive oil in medium skillet. Add chicken; cook and stir until no longer pink in center. Remove from heat; cool slightly.
- Combine cooked bulgur, chicken, tomato, parsley, green onions and lemon juice in large bowl; toss gently to blend. Season with salt, if desired and pepper to taste.
