Mediterranean Chicken Salad

Makes 4 servings


1 box (5-1/4 ounces) quick-cooking bulgur wheat
3/4 pound chicken tenders
1 tablespoon olive oil
1 cup chopped tomato
1 cup chopped fresh parsley
2 green onions, sliced
2 tablespoons lemon juice
Salt (optional)
Black pepper


  1. Prepare bulgur according to package directions.
  2. While bulgur is cooking, cut chicken tenders into 1-inch pieces. Heat olive oil in medium skillet. Add chicken; cook and stir until no longer pink in center. Remove from heat; cool slightly.
  3. Combine cooked bulgur, chicken, tomato, parsley, green onions and lemon juice in large bowl; toss gently to blend. Season with salt, if desired and pepper to taste.
