Mediterranean Microwave Meat Loaf

Makes 4 servings


1 pound 90% lean ground beef
1/4 pound Italian sausage, casings removed
1/2 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1 large egg
1/3 cup plus 2 tablespoons prepared pasta sauce, divided
2 tablespoons lemon juice, divided
1/2 teaspoon ground allspice
1/4 teaspoon black pepper


  1. In large bowl combine ground beef, sausage, bread crumbs, cheese, egg, 1/3 cup pasta sauce, 1 tablespoon lemon juice, allspice and pepper. Mix until blended. Pat into ball. Place in 9-inch glass pie plate or shallow microwavable casserole 9 to 10 inches in diameter. Press into 7-inch circle.*
  2. Microwave, lightly covered with paper towels, at HIGH 8 minutes. Pour off drippings. Meanwhile combine 2 tablespoons pasta sauce and remaining 1 tablespoon lemon juice; spread over top of meat loaf. Microwave 3 to 5 minutes more or until meat loaf registers 160°F in center. Let stand 5 minutes before serving.

Serving Suggestion

Serve with frozen stuffed potatoes heated according to package directions and tossed green salad.
