Mediterranean Tuna Salad
Makes 4 servings
|1/4||pound fresh green beans|
|1||can (12 ounces) tuna, drained, separated into chunks|
|2||tablespoons capers (optional)|
|1||(15-ounce) can Great Northern beans, rinsed and drained|
|1||large tomato, chopped|
|12||ripe Greek olives|
|Chopped fresh chives (optional)|
|Prepared Italian Dressing|
- Cook green beans in slightly salted boiling water 5 minutes or until crisp-tender. Rinse with cold water; drain.
- Place tuna in center of serving platter; sprinkle with capers.
- Arrange Great Northern beans, tomatoes and olives around tuna; surround with green beans. Sprinkle with chives. Serve with dressing.
