Mini Cheese Burritos


Makes 4 servings


2 (8-inch) fat-free flour tortillas
1/4 cup canned fat-free refried beans
1/4 cup chunky salsa
4 (3/4-ounce) reduced-fat Cheddar cheese sticks*

*Reduced-fat Cheddar cheese block can be substituted. Cut cheese into 2x1/4x1/4-inch sticks.


  1. Cut tortillas in half. Spread beans over tortilla halves, leaving 1/2-inch border around all edges. Spoon salsa over beans.
  2. Cut cheese sticks crosswise in half; arrange on one side of tortilla. Fold rounded edge of tortilla over cheese; roll up. Place burritos, seam side down, on microwavable dish.
  3. Microwave on HIGH 1 to 2 minutes or until cheese is melted. Let stand 1 to 2 minutes before serving.
