Minted Pear with Gorgonzola
Pears are a great source of copper, potassium, vitamin C, boron and fiber. You can find fresh pears starting in late summer and continuing through the winter.
Makes 4 servings
|4||whole firm pears with stems, peeled|
|2||cups Concord grape juice|
|1||tablespoon finely chopped fresh mint|
|1/4||teaspoon ground nutmeg|
|1/4||cup Gorgonzola cheese, crumbled|
- Place pears in medium saucepan. Add grape juice, honey, mint, cinnamon stick and nutmeg. Bring to a boil over high heat. Cover; simmer 15 to 20 minutes, turning pears once to absorb juices evenly. Cook until pears can be easily pierced with fork. Remove pan from heat; cool. Remove pears with slotted spoon; set aside. Discard cinnamon stick.
- Bring juice mixture to a boil; simmer 20 minutes. Pour over pears. Sprinkle Gorgonzola evenly around pears.
