Makes 2 cups
|1/4||cup plus 2 tablespoons butter|
|1/4||cup plus 2 tablespoons all-purpose flour|
|2||cups milk, warmed|
|1/4||cup plus 2 tablespoons grated Romano cheese|
|Dash ground nutmeg|
- Melt butter in 2-quart saucepan over medium heat. Add flour and salt; stir to blend. Add milk; stir to blend. Bring to a boil over high heat, stirring constantly.
- Reduce heat to low; simmer uncovered, 1 to 2 minutes until slightly thickened.
- Remove from heat. Stir in cheese and nutmeg.
