No-Bake Tamale Pie

No-Bake Tamale Pie from Hunt's® combines ground beef, corn and black beans in a savory sauce, topped with polenta slices and cheddar cheese.

Ingredients

3 cups Three-In-One Meaty Tomato Sauce (Hunt's® web recipe)
1 can (15 oz each) Ranch Style® Black Beans, drained, rinsed
1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
1 cup frozen whole kernel corn
8 slices prepared polenta, 1/2-inch thick (8 slices = about 12 oz)
1/2 cup shredded reduced-fat Cheddar cheese (1/2 cup = 2 oz)
Chopped fresh cilantro, optional

Preparation

  1. Combine tomato sauce, black beans, diced tomatoes and corn in large microwave-safe bowl; mix well. Microwave, covered, on HIGH 3 to 5 minutes or until hot. Set aside, still covered.
  2. Heat large nonstick skillet over medium-high heat 1 minute. Add polenta slices and cook 3 minutes per side, or until golden brown. Sprinkle cheese evenly over polenta slices after turning once.
  3. Transfer hot meat mixture to 8x8-inch baking dish. Top with polenta slices. Garnish with cilantro, if desired.
