Norma D's Cocoa Brownies the Editors of Publications International, Ltd.
This large pan of cake-like brownies is perfect for a potluck supper or club meeting.
Makes about 30 brownies
|2||cups all-purpose flour|
|2||cups granulated sugar|
|1||cup hot coffee|
|1/4||cup unsweetened cocoa powder|
|2||eggs, lightly beaten|
|1||teaspoon baking soda|
- Preheat oven to 400°F. Butter a 17-1/2X11-inch jelly-roll pan. Combine flour and granulated sugar in large bowl. Combine butter, coffee and cocoa in small heavy saucepan. Bring to a boil over medium heat, stirring constantly. Combine buttermilk, eggs, baking soda and vanilla in small bowl. Stir cocoa mixture into flour mixture until smooth. Stir in buttermilk mixture until well blended. Pour batter into prepared pan. Bake 20 minutes or until center springs back when touched. Meanwhile, prepare Cocoa Frosting. Remove brownies from oven. Immediately pour warm frosting over hot brownies, spreading evenly. Cool in pan on wire rack. Cut into 2-1/2-inch squares.
