Nutty Pan-Fried Trout
Makes 4 servings
|2||tablespoons olive or vegetable oil|
|4||trout fillets (about 6 ounces each)|
|1/2||cup seasoned bread crumbs|
|1/2||cup pine nuts|
- Heat oil in large skillet over medium heat. Lightly coat fish with bread crumbs. Add to skillet.
- Cook 4 minutes on each side or until fish begins to flake when tested with fork. Transfer fish to serving platter; keep warm.
- Add pine nuts to drippings in skillet. Cook and stir 3 minutes or until nuts are lightly toasted. Sprinkle over fish.
