Orange-Ginger Broiled Cornish Hen

This easy-to-do entrée will impress your guests!


Makes 4 servings


2 large Cornish hens, split (about 1-1/2 pounds each)
2 teaspoons peanut or vegetable oil, divided
1/4 cup orange marmalade
1 tablespoon minced fresh ginger


  1. Place hens, skin side up, on rack of foil-lined broiler pan. Brush with 1 teaspoon oil.
  2. Broil 6 to 7 inches from heat 10 minutes. Turn hens skin side down; brush with remaining 1 teaspoon oil. Broil 10 minutes.
  3. Combine marmalade and ginger in cup; brush half of mixture over hens. Broil 5 minutes.
  4. Turn hens skin side up; brush with remaining marmalade mixture. Broil 5 minutes or until juices run clear (180°F) and hens are browned and glazed.
