Orange-Ginger Broiled Cornish Hen
This easy-to-do entrée will impress your guests!
Makes 4 servings
|2||large Cornish hens, split (about 1-1/2 pounds each)|
|2||teaspoons peanut or vegetable oil, divided|
|1/4||cup orange marmalade|
|1||tablespoon minced fresh ginger|
- Place hens, skin side up, on rack of foil-lined broiler pan. Brush with 1 teaspoon oil.
- Broil 6 to 7 inches from heat 10 minutes. Turn hens skin side down; brush with remaining 1 teaspoon oil. Broil 10 minutes.
- Combine marmalade and ginger in cup; brush half of mixture over hens. Broil 5 minutes.
- Turn hens skin side up; brush with remaining marmalade mixture. Broil 5 minutes or until juices run clear (180°F) and hens are browned and glazed.
