Orange-Scented Panna Cotta


Makes 6 servings


2 tablespoons orange-flavored liqueur or orange juice
1 envelope unflavored gelatin
3 cups heavy cream
1/4 cup powdered sugar
2 tablespoons sucralose-based sugar substitute
1 teaspoon freshly grated orange peel
1/2 teaspoon vanilla


  1. Combine liqueur and gelatin in cup. Set aside 10 minutes; do not stir. (Gelatin will absorb liquid.)
  2. Combine cream, sugar, sucralose and orange peel in heavy saucepan. Bring to a simmer, stirring constantly over medium heat. Add gelatin mixture; simmer 1 minute more, stirring constantly, to dissolve gelatin. Remove from heat; stir in vanilla.
  3. Spoon cream mixture into 6 custard cups. Set aside 30 minutes to cool. Refrigerate 3 to 4 hours.
  4. Serve in custard cups or unmold and invert onto serving plates. Garnish as desired.
