Oriental Salad Supreme


Makes 4 servings


1/4 cup peanut or vegetable oil
1/4 cup rice vinegar
2 tablespoons brown sugar
1/2 medium unpeeled cucumber, halved and sliced
6 cups torn romaine or leaf lettuce
1 cup chow mein noodles
1/4 cup peanut halves or coarsely chopped cashews (optional)


  1. Combine oil, vinegar and brown sugar in small bowl; whisk until sugar dissolves.* Toss with cucumbers. Marinate, covered, in refrigerator up to 4 hours.
  2. Just before serving, toss dressing with remaining ingredients.
