Makes 4 servings
|2||large baking potatoes (about 10 ounces each)|
|2||tablespoons butter or margarine, melted|
|2||tablespoons vegetable oil|
|Salt and black pepper|
- Preheat oven to 425°F.
- Scrub potatoes; do not peel. Thinly slice potatoes crosswise. Pat potato slices dry with paper towels. Place potatoes in medium bowl. Add butter and oil; toss to coat. Place on nonstick baking sheet.
- Bake 10 minutes or until tender and lightly browned, stirring lightly after 5 minutes. Season with salt and pepper to taste.
