Makes 4 servings
|1||very ripe papaya|
|1||cup peach or vanilla nonfat yogurt|
|1||teaspoon lime juice|
|3/4||teaspoon grated lime peel|
- Cut papaya lengthwise into halves; discard seeds. Scrape out flesh with spoon; discard skin. Combine papaya, yogurt, honey, lime juice and lime peel in blender or food processor. Process until smooth.
- Fill four 5-ounce paper or pliable plastic cups with papaya mixture. Freeze 20 minutes. Insert wooden ice cream stick or plastic spoon in center of each cup. Freeze 8 hours or overnight until firm.
- To serve, peel away paper cup or gently twist and ease frozen pop out of plastic cup.
