Pasta Primavera

Fresh broccoli, cauliflower, carrots and peppers are loaded with vitamins and minerals. They make this Italian dish an excellent choice for lighter eating.


Makes 4 servings


1/3 cup broccoli florets
1/3 cup cauliflower florets
1 baby carrot, peeled and thinly sliced
1 tablespoon olive oil
1/3 cup red bell pepper, peeled and thinly sliced
1/3 cup yellow bell pepper, peeled and thinly sliced
1/3 cup snow peas
1/8 cup shiitaki, morel or chanterelle mushrooms
1 clove garlic, minced
1 package (16 ounces) linguine, cooked and drained
4 leaves minced fresh basil or 2 teaspoons minced fresh chervil


  1. Steam broccoli, cauliflower and carrot until crisp-tender, about 3 minutes. Heat olive oil in large skillet over medium heat. Add steamed vegetables, bell peppers, snow peas, mushrooms and garlic. Cook and stir for 3 minutes. Toss with hot linguine. Sprinkle with basil; serve immediately.
