Pea Pod Medley


Makes 4 servings


2 tablespoons oil
1/2 pound snow peas, trimmed
1/4 pound mushrooms, sliced
1 yellow or red bell pepper, cut into strips
Salt and black pepper


  1. Heat oil over medium-high heat in large skillet or wok. Add vegetables.
  2. Stir-fry 4 minutes or until vegetables are crisp-tender. Season with salt and black pepper to taste.
