Penne with Tomatoes and Pine Nuts
Penne with Tomatoes and Pine Nuts from Hunt's® combines penne pasta, onion, garlic and whole tomatoes with basil in a simple but classic dish.

|PAM® Olive Oil No-Stick Cooking Spray|
|1/2||cup chopped onion|
|2||teaspoons finely chopped garlic|
|1||can (28 oz each) Hunt's® Whole Tomatoes with Basil, undrained, broken into bite-size pieces|
|8||ounces dry whole grain penne pasta, uncooked|
|1/3||cup shredded Parmesan cheese|
|1/3||cup pine nuts, toasted|
|1/4||teaspoon kosher salt|
|2||tablespoons chopped fresh Italian (flat-leaf) parsley|
- Lightly spray large skillet with cooking spray; heat over medium heat. When hot, add onion and garlic; cook 2 to 3 minutes or until onion is lightly browned and tender.
- Add undrained tomatoes; reduce heat and simmer 20 to 25 minutes or until slightly thickened. Meanwhile, prepare pasta according to package directions. Drain and add pasta to tomato mixture.
- Stir in cheese, pine nuts and salt. Sprinkle with parsley and serve.
