Polenta Pizzas

Makes 4 to 6 servings

Ingredients

1 teaspoon olive oil
1/2 cup chopped onion
1/4 pound bulk mild Italian sausage
1 can (8 ounces) pizza sauce
1 roll (1 pound) prepared polenta
1 cup (4 ounces) shredded mozzarella

Preparation

  1. Preheat oven to 350°F. Spray 13X9-inch baking pan with nonstick cooking spray; set aside.
  2. Heat olive oil in small skillet. Add onion; cook and stir over medium heat 3 minutes or until tender. Shape sausage into small rounds. Add to skillet and brown 5 minutes, turning frequently. Stir in pizza sauce; simmer 5 minutes.
  3. Cut polenta roll into 16 slices; arrange in prepared pan. Spoon 1 heaping tablespoon sausage mixture over each polenta slice. Sprinkle 1 tablespoon cheese over each slice. Bake 15 minutes or until polenta is hot and cheese is melted.
